Dairy Free Cauliflower & Macaroni Cheese

Ingredients

  • 250g macaroni pasta
  • 1 medium cauliflower - into florets
  • 250-300ml plant based milk with added calcium
  • 100g grated dairy free cheese
  • 2 tbsp Vitalite
  • 2 tbsp of plain flour
  • ½ tsp dijon mustard
  • ½ tsp paprika

To Top:

  • 25g grated dairy free cheddar cheese
  • 15g panko breadcrumbs
  • 8-10 cherry/plum tomatoes cut in half.

Directions

How to make - to start off

  1. Preheat the oven to 200°C / 400°F /GM 4
  2. Cook the macaroni in a pan of boiling water for the mount of time as stated on the packaging.
  3. While the macaroni is cooking, steam the cauliflower florets on top of the macaroni for around 5-6 minutes until softened slightly.
  4. Once the pasta is cooked, drain and keep to one side.

The Creamy 'Cheesy' Sauce

  1. In a small saucepan, melt Vitalite over a low heat.
  2. Once melted, add all the plain flour and stir until it starts to come together. Cook this on a medium heat for 2-3 minutes, ensuring it doesn't burn.
  3. Turn off the heat then slowly add your plant-based milk, about 2 tablespoons at a time, stirring continuously to avoid lumps.
  4. Once around 250mls of the milk is mixed in, stir in the dijon mustard and paprika and turn up the heat to bring the sauce to a boil (it will thicken). Once boiled, reduce to a simmer. N.B. If the sauce becomes too thick then add in a little extra plant based milk.
  5. Add in 100g grated plant-based cheese, give it a good mix together and then turn off the heat.

Assembling and Baking:

  1. Combine the cooked macaroni pasta and cauliflower in a baking dish.
  2. Pour the creamy sauce over the macaroni pasta and cauliflower, ensuring an even coating.
  3. Sprinkle extra cheese, chopped cherry tomatoes, and breadcrumbs on top for added flavour and texture.
  4. Bake in the preheated oven for 15-20 minutes until the top is crunchy and golden.
  5. Once done, take it out of the oven and let it cool for a couple of minutes.
